Which age in-house between 5-7 days for a much-concentrated flavor of the duck breast. Before serving, it will then be pre-seared to give that crispiness to the Duck skin. It is paired with lemongrass and tamarind paste for a sweet and sour flavor.
On the side, a sausage made from the trimmings of the duck and wrapped with betel leaf to give it a little more aromatics.
