The finishing touch is the avocado rose, fish roe and spicy mayonnaise and sesame seeds to complement the main ingredients with a contrast of colors and flavors.

A super healthy tuna poke bowl with chunks of fresh yellow tail tuna, seaweed and pickled cucumbers on top of a bed of steamed riced cauliflower. The finishing touch is the avocado rose, fish roe and spicy mayonnaise and sesame seeds to complement the main ingredients with a contrast of colors and flavors.

This is my signature cake. It is called "Tomás", after the little boy (not so little now) that told me to add the raspberries in each layer. It was the final touch to my chocolate cake and it is my clients' favorite for some time now.

This is my quick and easy twist on famous Toscan soup - ribollita. I made it with cannelini beans, tomatoes and kale and served with parmesan garlic toasted bread.  The idea behind this picture was to make it look rustic and autumnal.

This was shot for a lovely feature in Seasoned by Chef Magazine. I just love the silkiness of the chocolate edge...but then, I would - the sweet tooth in me had to be restrained when I shot it.<br />

Beef cheeks braised with freshly tomato and basil sauce with mashed potato sliders. I can't really complaint anything about the texture of beef cheeks, tender but not fat, and more importantly its price is only 60-70% of briskets, hard to find in Toronto though.
